This weekend I stumbled onto a spot tucked inside a centuries-old convent turned hotel in Old San Juan. The kind of place where history lingers in the walls but the vibe feels completely now.

Falling in Love With a New Restaurant in Old San Juan

If you’ve been here for a while, you know I usually write about my travels — the hotels, the hidden restaurants, the places around the world that leave a mark on me.

But this week feels different.

Because I didn’t get on a plane.

And I still had one of the best dining experiences I’ve had in a long time.

Tucked inside the iconic Hotel El Convento in Old San Juan, Materia Prima feels like the kind of restaurant you’d expect to stumble into in Madrid or New York — intimate, intentional, elevated. But it’s right here at home.

The name means “raw material,” and you feel that philosophy immediately. The ingredients speak. Nothing is overdone. It’s refined without trying too hard.

Here’s what I ordered (and would order again without hesitation):

•    The pasta roti — perfectly balanced, comforting but elegant. The kind of dish that makes you pause mid-conversation.     •    The chicken — cooked beautifully, flavorful, simple in the best way.     •    A tuna tartar special that was unbelievably fresh. Light, clean, melt-in-your-mouth.     •    And a dirty martini that is absolutely a must. (If you know, you know.)

What I loved most wasn’t just the food — it was the experience. The lighting. The service.
